This coffee comes from Lerida Estate, located in the Alto Quiel region of Boquete, from a lot known as “Loma” at 1800 MASL. It was harvested in February 2025. The coffee was selected using only the ripest cherries through a flotation process. Afterward, the cherries were placed in a fermentation tank equipped with a hose connected to a motor that introduced oxygen to oxidize the cherry skin. This oxidation process was carried out for 7 hours only. After 48 hours, the fermentation process was complete. The cherries were then depulped and moved into a cold room to dry as a washed coffee for a period of 25 days.
